I’m dairy-free and gluten free so I had to come up with a version of this family favorite that I could enjoy! It came out good, y’all. Like, really good! So good that my normal go-to gluten-free, peanut butter cookies will be taking the back burner for a while.
Now, if you’ve never had chocolate gravy, don’t get scared! This is a delicious, chocolaty, pudding. It’s not served with meat and mashed potatoes. You can serve chocolate gravy over biscuits (check out the non-gluten free version of this recipe under Heirloom Recipes), or simply eat it by itself!
GLUTEN-FREE/DAIRY-FREE, SOUTHERN CHOCOLATE GRAVY
1 1/2 cups of sugar
2 tablespoons of cocoa
4 tablespoons of all-purpose, gluten-free rice blend flour
1/2 teaspoon of baking powder
1/2 teaspoon of salt
2 cups of lactaid (or some other lactose- free milk), almond milk, or soy milk
2 tablespoons of coconut oil
1 tablespoon of vanilla
Here we go!
Stir together dry ingredients.
Then, whisk in lactose free milk, vanilla, and melted coconut oil.
Cook in double boiler, stirring until desired consistency is achieved. Chocolate gravy can also be cooked in the microwave, heating for three minutes at a time, stopping to stir after each heating interval.
